Triple Green Sandwich
1. Spread about 1 tablespoon of Pesto onto each slice of bread
2. On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread.
3. Heat the grill pan over medium low heat
4. Add sandwich to the pan, pushing down gently using a grill press and cook until bread is golden brown on both sides.
5. Slice in half and serve
