Lemon Biscuits

Ingredients
- 200g Sunshine Plain Flour
- A pinch of salt
- 50g icing sugar
- 50g golden caster sugar
- Grated rind of 1 lemon
- 120g of unsalted SCS butter, chilled and diced
- 1 medium egg, beaten
Methods
- Combine thoroughly flour, salt, sugars and grated lemon rind in food processor.
- Add cold chunks of butter and process until mixture resembles fine crumbs.
- Add egg and process again until dough clumps together.
- Shape dough into a log about 8 cm in diameter and wrap in foil.
- Chill until hard-at least 2 hours.
- Slice logs into rounds about 5mm thick and place them slightly apart on baking sheets.
- Bake in preheated oven at 180ºC(350ºF) until golden brown about 10-12 minutes.
- Transfer to wire rack and let cool.
